MANAGER’S MESSAGE: CARROT-GREENS PESTO? HECK, YEAH!
While beets, carrots, and turnips are tasty and good for you, did you know that the green parts of all these delicious root vegetables are also packed with vitamins and easy to cook? Beet greens are absolutely chock-full of vitamins A, K, and C, folate, and iron, while turnip greens are one of the most nutritious greens out there. They’re even more nutrient-rich than their roots (the turnips that we all know and love), and are one of the highest vitamin A sources in the entire plant kingdom!!! Beet and turnip greens are seriously fresh and tender right now, and they’re easy to cook.
Carrot greens are one of my new favorite discoveries. Most people throw these out (that is, compost them!) or feed them to their rabbits, but I find that they’re amazing in a simple pesto. Toss the greens and other ingredients into a food processor, and in a few seconds you have a delicious sauce for pasta or a topping for a grilled steak! Below are a few ideas to use these three tasty greens. Try them out and reap the health benefits!
