Chop Chop Salad*
Here is a colorful and easy salad to brighten up a beginning-of-fall plate!
Goes very well with black beans, rice, quinoa, and any other dish that would benefit from a mexican inspired twist.
Ingredients:
  • 1 large green bell pepper
  • 1/2 red onion
  • 1 medium summer squash
  • 1 medium to large heirloom tomato
  • 2 cloves garlic
  • About 1/4 cup of minced parsley
  • salt
  • pepper
  • lemon juice
  • olive oil

Method:
  1. Wash vegetables. Then chop all of them into a small dice, about 1/2-1 inch cubes. Try to include the tomato’s juices
  2. Crush the 2 cloves of garlic in a medium bowl with the back of a large spoon. Then add all of the ingredients to taste and mix well. Drizzle with a little olive oil. It is best to have to salad sit for at lest 15 min to let flavors combine and onion to mellow.

Enjoy!

Welcome from the Board
Did you hear the news about the bumper crop of apples in New England this year?  Hearing this makes us feel happy for apple growers- think of what it takes to grow an apple!  And it makes us happy to live here, so close to the source of a large variety of food.  And it makes us happy that we have been able to work with the growers and producers to bring the locally produced goods to you every week!

Come to the market this week, and you will be happy, too!

Fruitfully Yours,

The Board of Directors
