This week we have great activities lined up for NUTRITION DAY at the Medford Farmers Market! We are proud to provide you with fresh, nutritious, delicious food each week at the market.  For example, the fruits and vegetables that you buy from our farmers were most likely picked on Wednesday or Thursday so they retain many more vitamins, minerals and antioxidants as compared to the produce you buy at the supermarket.
Can’t you just taste the difference in the fresh sweet corn and flavorful tomatoes this time of year?!
Thanks for supporting our farmers and other local businesses.  And see you at the market on Thursday!

Fruitfully yours,
The Board of Directors of the Medford Farmers Market

Bring lots of questions about nutrition, food or the Paleo diet. Stop by and chat, or to pick up some delicious recipes and health articles.  Allison Nichols is a Certified Holistic Health and Nutrition Counselor. She specializes in working with individuals to cultivate a carefree relationship with food, and to have more vibrant, natural energy by transitioning to a whole food, often Paleo, diet.  You’ll also have the chance to enter your email into a raffle to win a Seasonal Sampler of Paleo Snacks from Steve’s Original PaleoKits— delicious, paleo-friendly beef jerky and grain-free granola!

Recipe of the week:
Paleo Stuffed Peppers
Ingredients
  • 2 green Bell peppers
  • 1 lb Italian sausage
  • 3 cups fresh spinach
  • 1 medium onion
  • 1 egg
  • Salt, pepper and garlic powder
Instructions
  1. Preheat the oven to 400F
  2. Chop and saute the onions in a little bit of olive oil until browned
  3. Remove the sausage from its casing and throw in a large bowl along with spinach, egg, garlic powder, salt and pepper.
  4. Once the onions cool, add them to the bowl and mix–using your hands works best for this step…just make sure the onions are cool enough…or you’ll burn yourself.
  5. Half and de-seed your green peppers. Place them in a glass baking dish.
  6. Fill each pepper with the sausage mixture.
  7. Bake at 400F for 40 minutes.

WINE PAIRING: You can pair The Paleo Stuffed Peppers with Coastal Vineyard’s White Wave if using sweet sausage and Ocean Breeze if using hot or spicy sausage.  Stop by the market to try these delicious wines.
